What we’re looking for:

We are seeking a highly skilled and creative Executive Chef to join our culinary team and contribute to the exceptional dining experience we offer at Elk Lake Lodge. The ideal candidate should possess a passion for food, great leader, motivated and loves creating exceptional dining experiences for everyone who walks through the doors. As an Executive Chef, you will be responsible for planning and executing menu items, managing kitchen operations, catering services, and ensuring the highest quality of food presentation and taste all while managing food costs and minimizing waste.

Responsibilities


The responsibilities would include, but not limited to:

·       Developing a culinary plan to ensure quality satisfaction with both long- and short-term goals.

·       Enhancing and maintaining food quality by creating standards for other kitchen staff members.

·       Overseeing and monitoring menu prices by proactive review and comparing it to the cost of inventory, food orders, and supplies.

·       Assisting with the creation of seasonal, monthly, or annual menus that align with the restaurant's concept and customer preferences.

·       Working with the Restaurant Manager to ensure food, beverage, and labour budgets are maintained and monitored.

·       Supervising and scheduling daily activities of the kitchen staff including Sous Chefs, Specialist Chefs, Cooks, Assistants and as well Servers.

·       Ensuring all kitchen equipment is running efficiently and arranging repairs and maintenance.

·       Oversight on operating costs of running the kitchen to ensure food, equipment, and staffing budgets are met.

·       Regularly update and adjust menus based on seasonal ingredients, food trends, and customer feedback.

·       Ensure that menu items are well-balanced, visually appealing, and consistent in taste and quality.

·       Oversee the preparation and cooking of all dishes, ensuring adherence to established recipes, portion sizes, and quality standards.

·       Train and guide kitchen staff in proper cooking techniques, food handling, and safety procedures.

·       Maintain a clean and organized kitchen environment, promoting a culture of hygiene and efficiency.

·       Maintain a meticulous approach to food quality, plating, and presentation, maintaining high standards of taste, texture, and appearance.

·       Provide leadership and direction to kitchen staff, fostering a positive and collaborative work environment.

·       Uphold and enforce food safety standards and hygiene regulations, ensuring compliance with local health codes and regulations.

·       Train staff on proper food handling, sanitation, and kitchen safety protocols.

·       Maintain a full weekly inventory of all food and food management products to ensure accurate food cost management.


 

Skills, Knowledge, Qualifications & Experience


·       Minimum one year of experience as an Executive Chef and minimum 5 years’ experience in a senior culinary position

·       Culinary degree or relevant certification is preferred.

·       Ability to work in a fast-paced multi-tasking environment.

·       Excellent attention to detail.

·       Ability to work as an individual contributor and as part of a team.

·       Ability to anticipate problems and create innovative solutions.

·       In-depth knowledge of various cooking methods, ingredients, and cuisines.

·       Strong creativity and ability to develop unique and appealing menu items.

·       Excellent leadership and team management skills.

·       Outstanding communication and interpersonal abilities.

·       Ability to thrive in a fast-paced environment and adapt to changing priorities.

·       Certification of food safety and sanitation regulations.

·       Knowledge of food cost management.
